Gluten-free,Vegan Tacos and Wraps

Not sure how you feel about that topic, but I truly love everything where I can choose from different ingredients and stuff them into a Taco or Wrap. So initially I just wanted to prepare chard wraps with a vegan filling but ended up making Papadum Tacos too. From Vegan Wraps to Vegan Tacos and Wraps, and here is why...

Vegan Tacos and Wraps

Often the filling and Wraps or Tacos are full with processed, unhealthy ingredients. That's why I wanted to find a healthy and ideally vegan version for myself. Lucky me, the day before, I just bought some very nice chard on the bio market and still had my standard variety of veggies in the fridge.

That's too green for me

I started by putting out all the ingredients onto the table and my husband came into the kitchen to ask me what's for lunch. My answer was: wraps, and he was super happy and I was a bit surprised by his joy. Usually for him a meal has to have some kind of meat and rice, otherwise something is missing.

So I chopped everything up, even did some fried tofu to get some nice crunchy pieces, prepared a delicious guacamole and started to fill those beautiful chards.

Then my husband came into the kitchen a 2nd time asking me a bit surprised what I am doing there. When I told him that this will be our lunch, he told me that's too green for him. Seems like the 1st time he came into the kitchen, he didn't notice that the chard will be the actual wrap... 🙂

Considering the fact that a plant-based diet was pretty new to him and that he might need a smoother transition, I remembered that I found Papadum in a small Indian shop recently, which I have never used before.

From Vegan Wraps to Vegan Tacos and Wraps for the sake of my marriage

For those that don't know what Papadum is, it's made out of chickpea or lentil flour, usually used in the Indian kitchen and gluten-free. Perfect to improvise and make Tacos out of them, I just had to pop them for a minute into the microwave and add the same filling I used for the Tacos.

Actually I'm super happy I did both, the vegan Tacos and Wraps. It's always fun, if you get to try new stuff and both versions turned out really delicious. Additionally, my husband really liked the Tacos version, so double win! 😉

In case you want to go for something slightly less green but still vegan, try my Pasta Arrabiata with a twist recipe.

Vegan Tacos and Wraps

So here is how to prepare tasty vegan Tacos and Wraps:

Wraps and Tacos

  • 4 medium to big chard leaves
  • 4 Papadum discs (or called Papar or Papad) you should be able to find it in Indian shops or normal grocery stores with International sections

  • 2 carrots
  • handful of cherry tomatoes
  • pickles
  • 1/2 bell pepper
  • 250gr of firm Tofu
  • Turmeric powder
  • salt
  • pepper

  • 2 ripe avocados
  • 1/3 of a red onion
  • salt
  • pepper
  • juice from 1/2 lemon
  • chili powder

Will become 4 chard wraps and 4 Papadum tacos, which serves 2 persons

vegan Tacos and Wraps

  1. Wash the chard leaves and and cut of the stem. Try to thin the stem on the leave part by cutting horizontally over it with a knife. Otherwise it might break when folding
  2. Chop the veggies. The carrots, bell pepper and pickles ideally into stripes, the cherry tomatoes into quarters.
  3. To prepare the guacamole, spoon out the pulp and mash it. Cut the onion into really small cubes. Add it to the mashed avocado together with the lemon juice. Finally season with salt, pepper and chili powder and give it a good stir.
  4. Cut tofu into cubes and fry it with some olive oil over high heat adding turmeric powder, salt and pepper to season. Fry until the tofu becomes slightly crunchy
  5. Take the chard leave and first place a heap of guacamole on it and spread it. Next, take a bit of each of the veggies and the tofu and place it in the middle of the leaf. Make sure you still have enough space on the edges. Finally fold the sides to the middle, et voilà, your chard wrap is done.
  6. Pop 1 Papadum at a time into the microwave, check on the package to see for how long. Once it's done, immediately bend it into taco form and wait for some seconds until it's hard. Then fill it with guacamole and the rest of the filling.

  • you can add all kind of veggies for the filling of the vegan Tacos and Wraps. I would have added sweet corn as well if I would have had it home. Just take whatever you feel like that day
  • make sure that you bend the Papadum the moment it comes out of the microwave. If you wait and you try to bend it, the disc will break
  • if you don't like chard, you can replace it for big lettuce leaves
  • if you have left-over veggies and guacamole, you can use it as a snack. Just dip the veggies into the guacamole and eat it like that

Would love to know which one you would prefer from the vegan Tacos and Wraps? Or would you do it like me and eat both? 😉
